Here`s a super-quick & protein-packed salad recipe (enter the “Happy Salad”). 🙂

You can have this after your workout or over lunch/ dinner. Feel free to replace the tuna with some mushrooms if you want to go all-vegan on this beauty. Or simply have them both tuna & mushrooms play nicely in the same bowl.

Save up precious time; use canned ingredients this time (mushrooms, corn, tuna).

Autumn Salad
Easy, protein-packed salad.

Ingredients:

1 medium-sized bell pepper

1/2 avocado

1 can of tuna (or mushrooms)

1 tea-spoon of hemp seeds

chopped parsley

1/2 lemon

1 table-spoon of corn

salt & pepper to taste

2 crackers/ tortillas (optional)

Preparation:

Cut the bell pepper into bite-size pieces. Throw it in a bowl. Add in the tuna or/ and mushrooms. Squeeze some lemon juice & mix it all up. Put the corn & hemp seeds. Mix again. Sprinkle some chopped parsley. Get the avocado in right at the end. (else it`s going to be all mushy). Salt & pepper to taste.

And we are DONE!
